Hinoki is a type of Japanese cypress renowned for its beauty & delicate, natural fragrance. Hinoki is one of the most prized types of wood in Japan. This tree is a type of a cypress that grows only in this part of the world where it is considered a sacred wood.
It is for centuries used for palaces, temples, and shrines and of course...for cutting boards since it is extremelly light and really high resistance to bacteria. Used in a cutting board, this medium-soft wood gives as you cut, helping to preserve the edges of your fine Shun cutlery. Quite simply put, hinoki is the perfect cutting surface for all your Shun knives. This larger size offers the right surface for all general-purpose cooking tasks.
Hinoki is famous for it's performance in the kitchen and held in the highest regard by Japanese chefs. As a softwood, hinoki is gentle on knives and is well suited for Japanese-style knives and techniques that use slicing and cutting motions instead of a traditional rocker motion. Lightweight, Hinoki is 1/3rd lighter than a comparable maple cutting board and is highly resistant to warping and bacteria growth.

The wood for Shuns hinoki products is grown in Japan and is Forest Stewardship Council (FSC) Certified for sustainable forest management practices. In addition, all our hinoki products are made from wood resulting from forest thinning, which is required to maintain healthy growth.
